The Blue Butterfly Pea Tea.

Sometimes called Indonesian blue tea, blue pea tea is used throughout Asia. This blue infusion is made from the whole flowers of Clitoria Ternatea hand picked and dried in the sun of Thailand.

It should not be confused with Oolong tea, which is also called “blue tea”. This one comes from a variety of semi-fermented green tea from Camellia Sinensis.

Use of the Blue Pea Butterfly flower.

The blue pea butterfly flower can be eaten fresh in a salad. These benefits consist in its concentration in vitamins. It is the anthocyanin molecule that gives it its special color.

But it is the butterfly tea (dried flower) which is more known to be consumed hot or cold. The dried flower can be incorporated into cooking or desserts. It is used to give color to the rice of the traditional Thai dessert “Pulut inti”.

This color is a gift from nature and completely natural. When blue pea tea is mixed with lemon, it changes color, creating gradations from Prussian blue to purple and pink.

What is butterfly pea flower tea?

Butterfly pea flower tea is an herbal tea prepared from the petals of the Clitoria Ternatea flower. This plant belongs to the Fabaceae family and is very common in Southeast Asia.

It is in fact a vine or vine with oval leaves. When it blooms, dark blue calyx-shaped flowers develop. Although there is also a variety with white flowers, it is the blue flowers that are used for the preparation of infusions.

Is blue pea tea a new invention?

No, as is often the case, when we talk aboutinfusions born in an Asian country, its history goes back to very ancient times. However, this treasure of nature has only recently arrived in the West. Since its arrival, it has attracted the interest of tea lovers because of its health benefits and its particular color changes.

Beyond its characteristic flavor and its medicinal properties used in Ayurvedic medicine, blue pea tea is distinguished by the color changes that the different substances added generate, by modifying the pH level of the infusion.

You owe it to yourself to try this Clitoria Ternatea Tea and there is a good chance that you will become completely addicted!
