The Blue Butterfly Pea Tea.

Clitoria Ternatea, is also called Butterfly Tea, Blue Pea Tea, or Butterfly Pea (in English)<. It is because of the shape of the flower (Clitoria) and its color that all these names have been attributed to it. Blue pea tea is very rich in vitamin A, B and C.

Sometimes called Indonesian blue tea, blue pea tea is used throughout Asia. This blue infusion is made from the whole flowers of Clitoria Ternatea hand picked and dried in the sun of Thailand.

It should not be confused with Oolong tea, which is also called “blue tea”. This one comes from a variety of semi-fermented green tea from Camellia Sinensis.

Use of the Blue Pea Butterfly flower.

The blue butterfly pea flower can be eaten fresh in salad. These benefits consist in its concentration in vitamins. It is the anthocyanin molecule that gives it its special color.

But it is the butterfly tea (dried flower) which is more known to be consumed hot or cold. The dried flower can be incorporated into cooking or desserts. It is used to give color to the rice of the traditional Thai dessert “Pulut inti”.

This color is a gift from nature and completely natural. When blue pea tea is mixed with lemon, it changes color, creating gradations from Prussian blue to purple and pink.
