Porcelain, invented by the Chinese, is a type of ceramic fired at very high temperatures.

It is thanks to this cooking that it is transparent. It is also above all this transparency which makes it possible to recognize the porcelain coming from China .

A bit of history of china.

China is famous for its long tradition of techniques and innovations in enamel work.

It is the Yangshao culture, which dates back to about 4000 B.C., that first coined the great name of Chinese ceramics .

The “blue and white”, appeared under the Mongolian dynasty of Yuans. They will develop fully under the Ming Dynasty.

The blue-white porcelain, will know a revival at the beginning of the Qing dynasty under the reign of the Kangxi emperor.

Preparation and ceremony of Chinese tea.

The preparation is done in the respect of the Chinese tea ceremony “Gong Fu Cha”.

1) Beforehand, the water will have been heated in a cast iron teapot. On sale HERE

2) In the Gaiwan, rinse the tea leaves very briefly with very little water from the fire. Discard this first juice.

3) When the water is at the right temperature, water the tea leaves again by filling the Gaiwan. Monitor the infusion until the desired concentration is reached.

4) Using the lid of the Gaiwan, strain the leaves and tea by pouring the infusion into the teapot.

5) In a cup, taste a very small amount of tea, if it conforms, serve starting with the oldest.

To note on the tea trays:

The preparation of the tea is normally done on a tea tray (available HERE). In this case, rinse the tea leaves, the teapot and the bowls.

The rinsing of the tea utensils, serves to clean, but especially to warm the porcelain. This way, the ideal temperature will be maintained longer.

All rinsing water is normally disposed of on the tray which has a draining drawer to collect the liquids.
