The tradition of Gungfu Cha or Chinese tea service.
Serving tea is a process that requires proper preparation of the teacups or tea bowls, the gaiwan (strainer bowl), and the teapot. For a Gongfu Cha ceremony, it is assumed that a kettle will be used. It is essential to have simmering water on hand throughout the preparation.
All utensils should be carefully arranged on a tea tray with a tray to collect the rinse water. Water is an integral part of Gungfu Cha (tea ceremony). Hot water is used to purify the utensils, rinse the tea leaves, and also to warm the teacups and teapot. If you don’t have a tea tray with a drainage tray (available HERE), prepare a large enough bowl to catch the rinse water.
Start by filling the teapot halfway with hot water. Once the porcelain of the teapot has warmed up, pour the water from the teapot into the Gaiwan to warm it as well. Next, warm the tea bowls, then gently pour the water onto the tray.
Place the tea leaves in the teapot and rinse for 1 to 2 seconds with about half a cup of water. Pour the rinsing water back onto the tea tray. Refill the teapot with hot water and let it steep with a saucer used as a lid. Use the gaiwan or a tea strainer to separate the tea leaves. Serve and take the time to savor your tea.
