Preparation of Snow Chrysanthemum tea.

Bring water to a boil in a cast iron teapot (preferably). Rinse and warm the teacup and teapot with boiling water. Then, place 2 teaspoons of chrysanthemum into a glass teapot (preferably) for 500 ml of water.

For the first and second infusions, steep for 3 to 4 minutes with the lid on in hot water at 90 to 95 degrees Celsius. A third or even fourth infusion is possible by gradually increasing the steeping time and water temperature.
