In accordance with the Chinese tea tradition, the tea leaves should be rinsed quickly with hot water. Also, rinse your Gaiwan and other utensils with hot water. All water used for rinsing leaves and utensils must be poured on the tray.

The Chinese tradition also requires that a small feng shui statue or figurine be placed on the tray. Often called “tea companions”, these statuettes are watered in order to observe the steam and appreciate the temperature of the water. It is therefore important to have a tea tray equipped with a draining grid and a watertight bottom to receive all the rinsing water.
