The different uses of Pu-erh.

Pu-erh tea can be purchased either raw/green (sheng) or matured/cooked (shu), depending on the method of processing or aging. Sheng pu-erh can be roughly classified on the tea oxidation scale as a green tea. The shou or green variants aged as post-fermented tea.

Unlike other teas that should ideally be consumed soon after production, pu-erh can be drunk immediately or aged for many years. Pu-erh teas are often classified by year and region of production, just like wine vintages.

Modern medical science has recently shown that the health benefits of Pu erh tea may be more than Chinese folklore. Since 1970, France, Japan and China have conducted multiple scientific studies on Pu-erh tea. They all suggest that continuing to drink Pu erh tea is a good way to maintain good health.
