The Different Uses of Pu-erh.

Pu-erh tea can be purchased either raw/green (sheng) or ripe/cooked (shu), depending on the processing or aging method. Sheng pu-erh can be roughly classified on the tea oxidation scale as a green tea. The shou or aged green variants are considered post-fermented teas.

Unlike other teas that are ideally consumed shortly after production, pu-erh can be drunk immediately or aged for many years. Pu-erh teas are often classified by year and production region, just like wine vintages.
